Reader question: Just wondering if you knew anything about an opening date for Pho Papa in the old Hong Kong Buffet building in Kimberly? With everything going on, I assume that they have pushed back their opening.

Answer: Pho Papa will open Saturday. 

The Vietnamese restaurant is at 700 E. Maes Ave. in Kimberly, in front of the former Shopko store.

Co-owner Evan Tran said the safer-at-home order delayed the restaurant’s opening, which was originally scheduled for March. They used the time to readjust to new safety guidelines. 

“We’ll have limited seating due to CDC guidelines,” said Tran. “Employees will wear masks.”

The new restaurant is not a buffet. 

Pho Papa is owned and operated by members of the Tran family, who moved here from Oregon. Evan Tran owns the restaurant with his brother, Denny, the head chef. Their brother Jason bought the building for $240,000 as an investment.

Pho Papa’s tagline is “Vietnamese Noodle Soup and Grill,” and its specialties will be pho soup and Vietnamese chicken wings.
